Semi-Homemade Pot Pie



My favorite foods as a kid were Pot pie, Clam chowder and Pizza.  Not much has changed, those three things are still in my top 5 favorite foods list.  The problem is that cheap store bought frozen pot pies give me wicked bad indigestion (no I'm not from Boston). So a while back I came up with a way to make it quickly at home.  It takes about 30 minutes depending on how much "scratch" you want to use.

If you wanted to get real Martha with it you could make the pie crust from scratch, chop and steam all the veggies and potatoes and create a fresh cream sauce.  "Ain't nobody got time for that" so I came up with a semi homemade version that may not be %100 clean but it is sure better than the frozen pie.

Ingredients
2 Pie crusts (if frozen defrost first)
1 bag of frozen peas and carrots (defrosted)
2 or 3 medium potatoes cubed and boiled
1 family size can of cream of mushroom soup
   OR
2 regular size cans of cream of chicken (which ever you prefer)
2 chicken breasts cubed and fully cooked




Directions
Pre bake 1 pie crust according to package (or recipe) instructions
In a big bowl mix together all other ingredients and season to taste
Pour all ingredients into baked pie crust
Cover with second crust
Bake for 15-20 minutes



Now if you want to get really fancy with it you can make mini pot pies. A friend posted a recipe for mini pot pies on Facebook the other day and a light bulb went off in my head.  Duh, everything taste better when baked into a cup.  So instead of making one big pie Zoe and I cut lots of little circles, baked them in a muffin tin and topped them with cute hearts.  Baked with love!
